3 Mouth-Watering Recipes That Won't Break the Bank
We always tell you not to eat junk food on the road, which means you’re probably wondering… what  do I eat then? My old paper logs?

If you can run appliances in your cab, then you have the perfect solution to avoid those fast food meals. Simply get yourself a slow cooker (like a Crock Pot)!

We know you are tight on time, so we’ve brought together 3 simple recipes you can set and forget in the back of the cab.

Fiesta Chicken

We found this one over at the Healthy Trucker, so you know it’s tasty, healthy, and geared towards the rig life.

You just need to get your hands on some boneless chicken breast, a can of Campbell’s cheddar soup, and a jar of salsa!

Simply toss all three ingredients into the slow cooker and cook on low for 6 to 8 hours, or high for 4 hours. It’s best to stir the food after a couple of hours.

Once you stop for the night, you can just pop the top off the slow cooker and enjoy!

  • 2.5 lbs of boneless chicken breast
  • 1 can of Campbell’s Condensed cheddar soup
  • 16 oz jar of salsa

Cook time: 4 - 8 hours

Peach Salsa Chicken

The Frugal Girls have the right idea, crafting a delicious recipe based on simplicity and affordability.

Much like the last recipe, this one is simple too. For this one, you need 4 boneless chicken breasts, a jar of peach preserves, and a jar of chunky salsa.

For this recipe, there’s a few extra steps. Cook the chicken with a bit of water on high for 3 hours or low for 6 hours. After that, drain the juices from the chicken. Mix the preserves and the salsa and pour over the chicken.

Cook on high for 30 more minutes and then it’s dinner time!

  • 4 boneless, skinless chicken breasts
  • 1 jar peach preserves, 18 oz.
  • 1 jar medium chunky salsa, 16 oz.
  • water

Cook time: 3.5 - 6.5 hours

Barbecue Sandwiches

We stayed pretty healthy on the first two, but we know sometimes you want something a bit more fun. Let’s try some barbecue sandwiches!

To stay with our theme of 3 ingredients, for this one you just need a pork loin, some barbecue sauce, and dinner rolls.

Place your pork in the slow cooker with enough water to cover the bottom of the pot, and cook on low for 7 hours. Afterward, shred the pork with two forks and drain some excess juices.

After that, pour in your favorite barbecue sauce and cook on low for 45 minutes to an hour.

Once it’s ready, you can just spoon it onto your bread of choice

  • 1 boneless pork loin roast
  • 1 bottle of barbecue sauce (18 oz)
  • 8 large dinner rolls (or bread of your choice)
  • water

Cook time: 7.5 - 8 hours

When you’re out there hauling freight, it’s easy to lose your mind in the stress of life. Balancing paychecks, eating truck stop food, and meeting tax deadlines is enough to give you a headache.

So what can you do to ease the stress? You know we advocate for healthy eating and exercise, but your mind might still need some help afterwards.

Just as you take care of your body, it’s important to care for your brain! Which is why some truckers have turned to meditation to cure their cognitive woes.

The Meditating Trucker

Take Linda Squire, for example. As a trucker for over a decade, Squire has seen her fair share of delays, road raging four wheelers, and engine troubles. All this stress adds up, leading to anxiety and more.

While she’s a laid back person, Squire says seeing so many accidents on the road can be worrisome. All those accidents and broken down trucks get to you, and you find yourself tense and frustrated.

With her route taking her from Ohio to Oklahoma weekly, finding the time for stress recovery became difficult.

But after learning about meditation, Squire found she could stay calm by introducing the mindful techniques into her life.

“When I get upset or scared, I focus on breathing and it helps me to relax a lot quicker,” Squire says.

Instead of letting the stress of work get to her, she has positive thoughts about her home and her farm.

“Through meditation, I can take control of how I’m feeling,” Squire says.

How Meditation Helps?

By clearing your mind, you can focus on a particular situation.

And while you might not feel one hundred percent convinced, studies have shown that meditation can exercise your brain for better focus, while also lowering stress and increasing forgiveness.

How to Meditate?

How do you go about meditating? Well, it doesn’t take much!

All you need is NOTHING.

Well, you need a willingness to concentrate on what is happening and to slow your mind down while breathing. You can lie down to meditate, but finding a quiet, still place is best.

In a quiet place, you limit your sensory distraction, which will be a great help. With your eyes closed, you can block out visual clutter and draw your mind elsewhere.

Some people use music or guided relaxation to help with the process. Others might find the extra sounds distracting.

Everybody knows that tractor trailers are slow, lumbering beasts with 18-wheels that can barely go over 20 mph, right?

Uh, wrong!

Not only was big rig racing a big thing in the 80s and 90s, it’s starting to make a comeback now!

That’s right, we have some racing big rigs you just have to see.

History of Big Rig Racing

While you don’t see it too much anymore (at least here in the States), truck racing at one point was a pretty big sport.

And we’re not talking about the truck version of NASCAR. We’re talking about old motor sport staples like the Great American Truck Racing Series, active throughout the 70s, 80s, and 90s.

It was a sight to see - scores of ten-wheeled trucks ripping up asphalt as they whipped around the tracks. I mean, these rigs were juiced up monsters, and would literally damage the tracks they rode on.

These races were smoky, visceral spectacles that easily dazzled the audience. Where’d they go?

Maybe it was because of the billowing trails of black smoke, or the increased danger from vehicle size - but big rig racing faded away in the 90s.

Worldwide Leagues Come Home

Well, they may have lost popularity in the States, but heavy truck racing stayed around in Europe, Australia, India, and South America.

And with the support of these international leagues, there has been a push to bring big rig truck racing back into the United States!

After a 22-year hiatus, racing trucks have returned to the States with the Meritor ChampTruck World Series.

The plan called for racing trucks to be comprised of Class 8 trucks from before 2010, with engine choices limited to commercially available diesels with manual transmissions.

Every truck will have a full safety setup, including roll bars, fuel cells, and fire suppression systems. The trucks will be restricted to a top speed of 100 mph.

ChampTruck boasts that race teams include both a mix of professionals and Average Joes. Teams have truck manufacturers, dealerships, and large trucking company employees working with smaller fleets, repair shops, and independent racers.

It’s diversified, like the trucking industry as a whole!

Preparing for the CDL Exam? You've Already Made These 5 Mistakes

Congrats! You've decided you want to become a trucker.

Now what?

Well, now comes the enjoyment of passing a test.

And the last thing you want to have happen is a simple mistake that causes you to have to retake your test at a later date.

So to prevent that, we’re here to provide you with the most common mistakes people make when preparing for their CDL.

Mistake #1: Not Ready for the Lifestyle

You know when you’re passionate about something you tend to try harder for it, right?

The same applies to when you’re going to become a trucker - ain’t passionate about it, you ain’t going to make it.

And although you might think you’re a great driver of your Ford F-150, that doesn’t mean you’re ready for the life of a semi.

This career isn’t it easy…

But if you really want it, adjust your attitude. Make being a trucker your lifestyle and prepare yourself (day and night) for the test.

Mistake #2: Not Caring

When you start truck driving school, you’ll find there are people in there that have the same interest and goals you have. But there are also people who don’t.

Avoid those people!

You want to get along with people who have the same aspirations and drive (no pun intended) as you.
Some of the most common mistakes you can make are to get caught up in the wrong crowd, not study, and fail your test.

Mistake #3: No Self Discipline

Forcing yourself to sit down, read the books, study the guide, and schedule a date to take the test takes a lot of self discipline and willpower.

But the only way to pass the test and get your CDL is to study. Don’t study, don’t pass—that simple.

And don’t try the cram-everything-in-a-week study approach. It doesn’t work.

Mistake #4: Not Staying Cool, Calm, and Collected

OK, let’s say you've studied, you hung out with the right people, you took it serious, and you made it an important part of your life - but you freaked out during the test.

Panicking and failing to stay calm during a stressful situation, like taking your CDL exam, can cause you to not do so well.

In the trucking career, you’re going to be put in high stress situations. You’ll get lost in the city, take a wrong turn, and have to navigate stressful traffic patterns - so keeping calm is pretty important.

Mistake #5: Giving up Completely

One of the biggest mistakes you can make is to give up on yourself and your dream career.
Sure the test is challenging, and it will require you to study, but that doesn’t mean it’s impossible.

You can pass it and you can become a truck driver.

Hey Bernie, Here's Why Trucks are Better Than Trains

Last month, presidential candidate, Bernie Sanders, made a statement about the trucking industry. And many people were up in arms about it.

And we can understand why!

Sander’s statement:

"We must move our transportation sector beyond oil by running our cars and trucks on electricity generated by solar and wind power. We need efficient public transportation, advanced renewable fuels, and high-speed passenger and cargo rail. Once we have a state-of-the-art rail system, we will not only be able to move passengers and cargo faster and more efficiently, we will make significant cuts in carbon pollution emissions that cause climate change."

To many, what Mr. Sanders said seemed like calling for the US to ban the use of trucks.

Although, not necessarily the intent of his statement, Mr. Sanders, and all political candidates for that matter, need to be a little more educated on why trucks are important to America.

Afterall, it’s trucks that keep America going.

So we’re here to prove it to them! Here’s why trucks beat trains every single time.

Railway Limitation

It will be a cold day in, well you know where, when a train can deliver goods to individual stores like Wal-Mart and Target.

Trains are limited to their tracks (obviously), meaning trucks are needed to deliver the freight to their final destination.

If we get rid of trucks, how are we going to get cargo to their final destinations?

We’ll let you answer that, future Mr(s). President!

Timely Delivery

Have you’ve ever ridden on a train? Takes forever, doesn’t it?

Between constant stops, slow passing through towns, and a max speed of 10 below posted speed limits—trains are not the best when it comes to a timely delivery!

And when you have perishable items on board, let’s hope they get there before they spoil.

Trains also operate on a complicated infrastructure that requires prior planning to avoid collision with other trains on the route.

Another reason to mark this up as a win in the truck category.

Trucks work off their own system, meaning they can arrive early to their final destination (without prior notice and advanced planning).

Truck Efficiency vs Trains

Here’s where most supporters of the railway come to attack the trucking industry.

Many supporters say that trains are more efficient than trucks when it comes to fuel. Although that’s true for now, it doesn’t mean trucks can never match the fuel efficiency of a train.

State-of-the-art trucks, like the Prevost H5-60, can almost reach train ton per miles. This new truck can go 350+ ton-miles, while trains make an average 400 ton-miles.

What is the Truck Stop Truckers Dream About?

Have you ever pulled into a truck stop and instantly regretted it? Either because the lanes were too small, the parking too scarce, or the amenities too unusable (or the less-than-competent drivers taking hours to back into a spot).

But you couldn’t back your truck and trailer up because of the nightmarish line of trucks behind you.

And we know this happens more often than not, doesn’t it?

So we asked around and came up with qualifications that would make a truck stop of truckers’ dreams - hopefully the next truck stop engineer will take a look.

The Parking Lot

The biggest, the biggest, issue at truck stops is the lack of parking.

A truck stop can have the nicest amenities and paved parking lot out there, but if it doesn’t have enough spaces to accommodate truckers, truckers won’t find the stop very useful.

Another big problem is the design of the parking lot.

The dream truck stop would have parking spaces a good distance away from the fuel islands (and enough for a lot of trucks to use). Parking spaces that are too close to the fuel islands cause congestion for the trucks backing into a spot and those waiting to get fuel.

You work on a tight deadline, so if you stops a truck stop only to get fuel, you don’t want to waste 20 minutes waiting for someone to back their truck into a spot.

And make sure the entrances and exits are always clear for truckers coming and going.

Take a look at this Love’s Truck Stop in Richmond Hill, GA for an example of a good parking lot design.

Plenty of parking on the left side, no congestion on the fuel islands, and plenty of entrances and exits.

Way to go, Love’s!

Good Security

Every trucker will tell you, the truck stops that have plenty of lighting and a security guard are usually in their top places to stop.

No one wants to have to worry about something happening on the way to get dinner, or when they’re getting ready to call it a night.

The dream truck stop would have cameras, lights, and a security guard to help truckers feel more comfortable.

And if you're tired of sleeping in your truck, check out this truck stop in Jubitz-Portland, Oregon, where you can enjoy sleeping in a hotel, a 24-hour restaurant, and a movie theater.


A truck stop is a trucker’s home away from home, so truckers appreciate the ones that really make it feel that way.

The dream truck would have nice showers, a restaurant that sold a variety of food types (truckers do get tired of eating the same thing over and over again), and a laundry mat.

Laundry? Yep! The dream truck stop would have a place that truckers could do laundry. Most drivers are out on the road for several days at a time, so having the option to wash a shirt comes in handy.

If you happen to be passing through Morris, Illinois, be sure to stop by the Morris Travel Center. They have excellent customer service and sell homemade pastries, bakery items, and the four-pound masterpiece of a burger known as the Ethyl Burger.

General Cleanliness

Truckers? Clean?

Believe it or not, truckers do enjoy a nice shower, a clean place to eat, and a nice outside area.

The dream truck stop would include good showers for truckers (with plenty of hot water), a lot of trash cans to stop trash from floating around, and clean fuel islands.

Most truck stop attendants wouldn’t think it, but if fuel islands aren’t regularly scrubbed and washed, the pavement gets slick, smelly, and gross from the amount of spilled fuel.

And speaking about exquisite bathrooms, check out the Sapp Bros in Sidney, Nebraska. This truck stop have granite countertops and are always clean. If something isn't clean or up to standard, all you have to do is push a button and an attendant will be there immediately to fix the problem.

And finally…

The final thing that the dream truck stop needs it to be in the middle of nowhere off a major highway.

Truckers don’t have time to fight traffic just to get to a fuel station or turn in for the night.

One trucker on Reddit explains it like this, “With electronic logs, my ‘wasted time’ clock starts the second I put the blinker on to exit until the time I get back on the highway. Think of it like a NASCAR pit stop. The faster it is, the better off I am.”
Passing through Walcott, Iowa? Then you have to stop at the largest truck stop in the world. Perfect for the hundreds of truckers who stop through and want to continue on their way.

Listen up, truckers!

You’ve got a lot on your plate.

From running 14-hour routes, dealing with government regulations, to being away from friends and family—you’ve got a tough gig.

And not to add any more toppings to the trucker challenge cake, we just felt like more people (especially four-wheelers) needed to know the challenges that are facing truckers today.

Challenge #1: Not Enough Pay for the Work

Sure, in every job there are days you feel like you don’t make enough money for the work you do. But for truck drivers, sometimes that day seems like every day.

You spend about 14 hours out on the road, fight deadlines, battle weather, and put up with reckless four-wheelers.

And don’t be fooled by the marketing strategies that say you’ll be home every weekend.

Most of the time, it doesn’t happen.

Challenge #2: The Constant Push to be Healthy

Now we are complete supporters of all truckers living healthy lives, but we understand the struggle and tight constraint you are now put under due to new regulations.

From your significant other, to your company, to the government, to (sometimes) us—it seems like everyone is pushing truckers to lead a healthier life.

Unfortunately, the way routes are designed and the time constraint you’re put under, there’s not enough time to stop and prepare a healthy meal or exercise.

You’re caught between a rock and a hard place. You need to exercise and lead a healthier life, but you need to make it to your destination before the load is considered late.

It seems though that the new regulations in Congress are going to help you get the hours you need off from work to lead a more healthy, active lifestyle.

Challenge #3: The Relationship Strain

Being away from family is tough.

And in this career, it seems like you’re in a different part of the country every week, causing you to miss out on a lot of family time.

Luckily, trucking companies are working to remedy this by letting spouses and significant others join their trucker on the road!

Challenge #4: The Constant Search for a Place to Sleep

Sure your truck comes with it’s own bed for you to pass out in after a long day (or night) on the road. But it’s not like you can just pull over on the side of the road and sleep.

One of the biggest challenges facing the trucking industry now is the scarcity of truck stops.

States have cut funding to many rest stops, leaving truckers to park in empty parking lots and less-than-ideal areas.

The lack of safe places to park is a big safety concern for truckers.

Challenge #5: The Struggle Between Company and Government

Your company wants you to deliver the load in the fastest time possible, whereas the government wants you to take long breaks to ensure safety on the roadways.

You’re now in a tug-of-war between the two.

Which do you listen to?

You don’t want to break the law and get fined, but you don’t want to lose good customers or get let go from your company.

It seems the government has realized this, but instead of handing out fines to companies, they’ve instead placed heavy restrictions on you and monitoring systems in your truck.

So much for your freedom!
